What is the best way to preserve the clarity of the headlights? Are there any
products that protect them. Perhaps more importantly what should be avoided?

I will assume that yours are new and looking good :)

I'd go with a Sealant over a wax and here's why (I googled it and copied it from somewhere but it explains it better than I would have)

A paint sealant is made of polymers, which are composed of tens of thousands of synthetic particles that are linked together. When a sealant bonds to your vehicle’s paint, it forms a rigid shell. It is not the warm carnauba that seems to melt into the paint. Paint sealants sit on top of the paint like a transparent chain metal suit. They are glossy and slick, but carnauba lovers will tell you they do not have the warmth and depth of a carnauba. However, the real selling point of a paint sealant is the durability. A premium paint sealant can last upto 8 months, sometimes longer.
Brand is up to you. But typicially you get what you pay for.

If the clairty goes or you induce swirls and light scratches while washing over time you can always have it corrected with a RO polish.

I like to use Meguiar's Plastix. It's not a protectant but it is a product you can use to lightly polish them on a regular basis.
