I have an A pillar gauge pod for my A/F gauge but now I have an empty hole. I have an Oil or Water temp gauge lying around. My question is should I use it as an oil temp or water temp? My car is not FI.

Both? :)

I would go for oil temp, but that's just me.

an easy way would be to cut the upper hose and use an adapter like this

Damnit, why couldn't I find one of those 2 years ago working on my other car :xZ!o: I had to buy two Chevy Small Block thermostat housings, drill and tap one of them for the sending unit, then put them back to back with a few bolts and a hand-made gasket. ugh....

i'd go oil since you already have a factory water temp gauge, especially if you plan on forced induction. Having 2 of the same gauges would annoy me.
