I'm pretty sure they are not made of iron. Safe bet would be that they are treated aluminum, since they don't rust.

Are the standard brakes on the 350Z cast aluminum? I was taking a look at them and they seemed aluminum, instead of iron.

They actually do rust. They are steel, coated with an anticorrosion. When I have sanded them smooth before powdercoating, they quickly develop light surface rust if not bathed in a metal prep that prevents it.
