I average about 17-18 mpg around town with minimal freeway, 20-22 with more freeway, and 26-30 on road trips.

You should be perfectly fine with that setup. My buddy runs the same sizes with his BFG KDWs and has no issues with vdc/tcs but he does have a little rubbing with the 285/40 on a 9.5 +20 rear

245 will look a little stretched on a 9.5" wheel. For the sake of maintaining the factory diameters, I would go with 255/40, 275/40

295/30 would probably fit without rubbing, but if you want to be sure you won't rub go with 285/35. I have 285/35 on a 10.5 +32 and there is plenty of room.
