New Car Clutch Issues

Hey guys, first time poster here. I need some help, I’ve been into cars my entire life and my little brother is just starting to get into it and he’s always wanted a 350z. Yesterday we went and looked at a 2005 convertible manual with 83k miles on it and ended up getting it for a pretty good deal, the car is extremely clean for a z (around here for some reason the only ones you see are absolutely thrashed). Instantly when test driving it I noticed that the clutch pedal was grabbing VERY high, like grabbing at the top half inch and the clutch was slipping on any bit of a hard shift. I was assuming the pedal was just so far out of adjustment that it was causing the clutch to be slightly pushed in so I didn’t think much of it. We took the car home and then I realized I cannot for the life of me figure out how to move the grabbing point down while still allowing the pedal to come all the way back up. I’ve adjusted the pedal, flushed and bled the system, but no matter where the pedal is adjusted to, the clutch grabs right at the very end and it will still slip. Also one thing I thought was a little funny was that the pedal kinda like clicks and springs back the last half inch of it’s travel, but it’s not actually doing anything there. Like you can push the clutch in half an inch to an inch before you feel the pressure. Any ideas as to what’s going on here? Thanks for any input, if we have to replace the clutch itself we will but hopefully that’s not what it is haha.
