There is no prescription technique for launching the Z. You hold a specific RPM. You let the clutch out in rapid fashion while applying full throttle. The exact RPM and how rapidly you can let out the clutch varies with HP, traction, and track condition. Only experimentation will find the right formula.
Definitely leave the VDC off.

Are you talking about the launch? If so, then the answer is no, unless you are running drag slicks, some super grippy drag radials, or trying to win some sort of bizarre wheel hopping burnout competition.
If you're talking about taking it to the redline in each gear... then pretty much yes. But don't go so far as to engage the rev limiter. There is some precision to selecting the exact RPM at which to shift in each gear, but pretty much isn't needed unless you're doing competitive bracket racing.
